# Ingredients:

01 - 3 tablespoons butter, softened, divided
02 - 1 medium onion, halved and thinly sliced
03 - Salt and pepper, to taste
04 - 4 slices cheddar cheese
05 - ½ cup mozzarella cheese, grated
06 - 2 slices sourdough bread
07 - 4 slices bacon, cooked

# Steps:

01 - Heat 1 tablespoon of butter in a stainless steel skillet over medium-high heat. Sauté the onion with salt and pepper until golden, stirring occasionally. Remove from the skillet.
02 - Add cheese to both slices of bread. Layer the cooked bacon and sautéed onions between the cheese slices. Place one slice of bread with cheese on top of the other to form a sandwich.
03 - Spread 1 tablespoon of butter on the top slice of bread.
04 - Melt the remaining tablespoon of butter in the skillet. Add the sandwich and cook on low heat until golden and crispy on both sides, pressing it down with a lid.
05 - Cut the sandwich in half and serve with a side of creamy tomato bisque.
