01 -
Preheat your oven to 375°F. This is going to be one amazing meatloaf, so let's get that oven nice and hot!
02 -
Cook those bacon slices in a pan until they're perfectly crispy, then crumble them up. In that same delicious bacon fat, sauté the mushrooms and onions until they're soft and golden. Let everything cool while you prep the rest.
03 -
In a big bowl, combine the ground beef, pork, Swiss cheese, breadcrumbs, milk, crumbled bacon, Parmesan, cooled mushrooms and onions, eggs, Worcestershire sauce, 1 tablespoon ketchup, garlic powder, salt, thyme, and pepper. Mix just until everything comes together - don't overwork it or you'll have tough meatloaf!
04 -
Form the mixture into a beautiful loaf shape and place it in a baking dish or on a parchment-lined baking sheet. Spread the remaining ½ cup ketchup all over the top like a glossy glaze.
05 -
Slide it into the oven and bake for 60-70 minutes until the internal temperature hits 160°F. The outside should be nicely browned and that ketchup glaze should be gorgeous!
06 -
Let your beautiful meatloaf rest for about 10 minutes before slicing - this helps it hold together perfectly. Then slice and serve this comfort food masterpiece while it's still warm and melty!
