Preheat oven to 350°F (175°C). Place chicken breasts into an oven-safe baking dish and spread ½ cup BBQ sauce over the chicken, ensuring it is fully coated. Bake for 20 minutes or until the chicken is cooked through. Remove from the oven and shred the chicken using two forks. In a large bowl, combine the shredded chicken with the remaining ½ cup BBQ sauce and mix until evenly coated.

Butter one side of each slice of bread (only one side). Lay the slices buttered side down. On 4 slices, spread ¼ cup grated cheese each. Add one fourth of the chicken mixture on top of the cheese, followed by 3 pineapple slices per sandwich. Top with another ¼ cup cheese per slice. Place the remaining slices of bread on top, buttered side facing out. Press down lightly with a spatula or hand.

Heat a skillet or grill pan over medium heat and spray with nonstick spray. Place 2 sandwiches butter side down on the skillet and cook for 3-4 minutes until browned. Flip the sandwiches and cook the other side for 1-2 minutes or until browned. Repeat these steps for the remaining sandwiches.

Cut the sandwiches in half and serve immediately.
