Pair two slices of onion rings—one larger and one smaller. Place the smaller onion inside the larger ring, leaving space in between. Slice mozzarella cheese to fit the gap and secure with a toothpick.

Heat oil in a deep cooking pot. Combine flour, baking powder, and salt in a bowl, mixing thoroughly. Dredge the assembled onion rings in this mixture and place on a wire rack.

Combine milk and beaten egg, mixing well. Add this mixture to the remaining dry ingredients and stir to form a batter.

Dip the onion rings in the batter, allowing excess to drip off. Coat with Panko breadcrumbs and place back on the wire rack.

Fry onion rings in heated oil, turning once, until both sides are golden brown. Remove them from the oil and place on a paper towel to drain.

Remove toothpicks before serving. Serve warm with marinara sauce for dipping.
