Copycat Taco Bell Chili Cheese Burrito (Print Format)

Homemade version of the famous fast food burrito with seasoned chili beef, refried beans, and melted cheddar cheese.

# Ingredients:

→ Chili beef filling

01 - 1 pound ground beef
02 - 1 medium yellow onion, diced
03 - 3 tablespoons chili powder
04 - 1 teaspoon cayenne pepper
05 - 1 teaspoon salt
06 - 2 cups water, plus 2 tablespoons divided
07 - 2 tablespoons cornstarch

→ Additional filling and assembly

08 - 1 can (16 oz) refried beans
09 - 1 can (6 oz) tomato paste, about 6 tablespoons
10 - 3 cups sharp cheddar cheese, shredded
11 - 10 large flour tortillas, 10-inch size

# Steps:

01 - Heat a large skillet over medium-high heat and add your ground beef and diced onion. Cook until the beef is nicely browned and the onions are soft, then drain off any excess fat. You want all that flavor without the grease!
02 - Add the chili powder, cayenne pepper, and salt to the beef mixture, stirring to coat everything evenly. Pour in 2 cups of water and let the mixture come to a gentle simmer.
03 - In a small bowl, whisk together the cornstarch with the remaining 2 tablespoons of water until smooth. Stir this slurry into the meat mixture and let it simmer until it thickens beautifully - this gives you that perfect burrito filling consistency.
04 - Stir in the refried beans and tomato paste, mixing everything together until well combined. The mixture should be thick and rich - just like that fast food favorite!
05 - Add 1½ cups of the shredded cheddar cheese and stir until it's completely melted and incorporated into the mixture. Save the remaining cheese for assembling your burritos.
06 - Place a tortilla on your work surface and warm it in the microwave for 15 seconds if needed to make it more pliable. Add a pinch of the remaining shredded cheese, then top with ¼ to ½ cup of the meat mixture.
07 - Fold in the sides of the tortilla first, then roll it tightly into a log shape from bottom to top. Repeat with all remaining tortillas and filling. Serve immediately with sour cream and salsa if desired - just like getting your favorite fast food fix at home!

# Tips:

01 - This copycat version tastes just like the original but you can customize it exactly to your liking - more cheese, extra spice, whatever you want!
02 - Feel free to experiment with different cheeses like pepper jack for heat, or a Mexican cheese blend for authentic flavor.
03 - Add some diced bell peppers or jalapeños to the meat mixture for extra flavor and a bit of crunch.
04 - These burritos are perfect for meal prep - wrap them individually in foil and freeze for up to 3 months for quick meals later.
05 - The cornstarch slurry is key to getting that thick, saucy consistency that won't make your tortillas soggy.
