Get your waffle iron nice and hot according to the manufacturer's directions, then give it a light coating of cooking spray or melted butter. Nobody wants stuck waffles!

In a big bowl, whisk together your cornmeal, flour, sugar, baking powder, baking soda, and salt until everything's evenly combined and happy together.

In another bowl, whisk your buttermilk, eggs, and melted butter until smooth and creamy. Make sure that butter isn't too hot or it'll scramble your eggs!

Pour the wet ingredients into the dry mixture and gently stir until just combined. Don't worry about a few lumps - overmixing will make your waffles tough, and we don't want that.

Fold in that gorgeous smoked Gouda and honey until they're evenly distributed throughout the batter. This is where the magic happens!

Using a tablespoon or cookie scoop, drop portions of batter onto your hot waffle iron. Cook for 2-4 minutes until they're golden brown and crispy around the edges.

Transfer your beautiful waffle bites to a wire rack to cool slightly - this keeps them from getting soggy on the bottom. Repeat with the remaining batter, greasing the iron as needed.
