01 - 6 big flour tortillas
02 - 2 cups pulled chicken (store-bought rotisserie works fine)
03 - 1/2 cup salsa or chopped tomatoes with green chilies
04 - 1 cup grated cheese (like cheddar, Jack, or Mexican blend)
05 - 1 teaspoon each of ground cumin and chili powder
06 - 1/2 teaspoon of onion powder and garlic powder
07 - Salt and pepper as needed
08 - 2 tablespoons butter (melted) or olive oil for brushing

# Steps:

01 - In a large bowl, combine the chicken, cheese, salsa, cumin, chili powder, onion powder, garlic powder, plus a bit of salt and pepper. Stir until it all comes together nicely.
02 - Set your oven to 400°F (200°C) and prep a baking pan with parchment or a light spray of non-stick oil.
03 - Spread out your tortillas. Place roughly 1/3 cup of the chicken mix in the center of each. Keep the amount manageable so they roll up easily.
04 - Tuck in the sides, then roll each tortilla from the bottom edge over the filling. Make sure they're rolled tightly and sit seam-down on the pan to hold them together.
05 - Use a brush to coat the tops with butter or oil. This trick gives them a beautiful crunch while baking.
06 - Bake them for about 20 to 25 minutes. When the tops are golden and they look crunchy, they're ready.
07 - Once baked, pull them out and let them sit for a few minutes to cool down. They're super hot inside, so give them a moment before serving.
08 - Lay them out and let everyone add their favorites like guac, sour cream, lime, or fresh cilantro.
