Heat your oven to 425°F. Line a baking sheet with parchment paper and give it a light greasing so nothing sticks.

Lay the thinly sliced squash in a single layer on your prepared baking sheet. Make sure they don't overlap so they get crispy all over.

Drizzle olive oil evenly over all the squash slices. Season generously with salt and black pepper, then sprinkle the Parmesan cheese on top.

Pop in the oven for 15 minutes, or until the edges get crispy and the cheese turns golden brown. Keep an eye on them so they don't burn.
