Crockpot Chicken and Dumplings (Print Format)

# Ingredients:

01 - 2 lbs boneless, skinless chicken breasts, completely thawed
02 - 1 medium onion, chopped into small pieces
03 - 16 oz frozen peas and carrots, keep frozen until ready to use

→ Creamy Base

04 - 10.5 oz can cream of chicken soup
05 - 10.5 oz can cream of celery soup
06 - 2 cups good quality chicken broth

→ Seasonings

07 - 1 tablespoon dried parsley
08 - 2 teaspoons dry thyme
09 - 1 teaspoon poultry seasoning
10 - 1/2 teaspoon salt
11 - 1/4 teaspoon black pepper

→ Dumplings

12 - 2 cans refrigerated biscuits (7.5 oz each, 10 count per can)

# Steps:

01 - Place the chicken breasts in your 6-quart slow cooker and top with the chopped onions.
02 - In a small bowl, mix together both cream soups, parsley, thyme, poultry seasoning, salt, and pepper until well combined. Spread this creamy mixture over the chicken.
03 - Scatter the frozen peas and carrots on top, then pour the chicken broth over everything. Cover and cook on high for 4 hours without stirring.
04 - After 4 hours, flatten each biscuit and cut into thin strips about 1/4 inch wide. Work quickly to keep the heat in the slow cooker.
05 - Open the crockpot lid quickly and place the uncooked biscuit strips on top of the mixture. Replace the lid immediately and cook for 1 more hour.
06 - Stir everything together well and shred the chicken with two forks - it should fall apart easily. The biscuits will break up and thicken the sauce. Serve hot.
