Butter one side of each piece of bread and set aside.

In a frying pan, melt a small amount of butter over low heat. Fry the eggs to desired yolk consistency and season with salt and pepper. Remove from the flame once done.

In a separate frying pan, place a slice of bread buttered side down. Add a slice of Colby Jack cheese on top.

Place two fried eggs on top of the cheese, followed by a slice of Pepper Jack cheese.

Top with another slice of bread, buttered side up. Cover the pan with a lid and cook on low heat until the cheese is melted and the bread is golden brown on both sides.
