Pepper Steak Quesadillas (Print Format)

Cheesy quesadillas filled with seasoned pepper steak, caramelized peppers, and a tangy homemade sauce.

# Ingredients:

→ Meat

01 - 2 pounds flat iron steak or alternative skirt, sirloin, or ribeye, sliced into thin 1/4 inch thick strips
02 - Salt, pepper, and garlic for seasoning

→ Vegetables

03 - 2 green bell peppers, chopped
04 - 1 yellow bell pepper, chopped
05 - 1 red bell pepper, chopped
06 - 1 whole white onion, diced

→ Sauce

07 - 1/2 cup soy sauce
08 - 1/2 cup brown sugar
09 - 1 tablespoon oyster sauce
10 - 1 tablespoon rice wine vinegar
11 - 1 tablespoon sesame oil
12 - 1 tablespoon garlic paste
13 - 1 tablespoon ginger paste
14 - 1 tablespoon red pepper flakes
15 - 2 tablespoons water (optional)

→ Quesadilla Ingredients

16 - Large tortillas
17 - Mexican melting cheese
18 - Chipotle mayo or sour cream
19 - Avocado oil for griddle

# Steps:

01 - Cook chopped bell peppers and onion on a griddle until translucent, about 10 minutes. Remove and set aside.
02 - Season steak with salt, pepper, and garlic. Cook on griddle for 6-8 minutes until browned and cooked through.
03 - Combine soy sauce, brown sugar, oyster sauce, rice wine vinegar, sesame oil, garlic paste, ginger paste, red pepper flakes, and optional water in a bowl to create a sauce.
04 - Add cooked vegetables back to the griddle with the steak, pour in the prepared sauce, and cook until caramelized. Remove the mixture from the griddle.
05 - Clean the griddle surface with water and add avocado oil to coat.
06 - Place a tortilla on the griddle and warm for 60-90 seconds. Flip, add cheese, pepper steak mixture, chipotle mayo or sour cream, and more cheese. Fold into a quesadilla.
07 - Toast the quesadilla until golden brown. Cut into slices and serve warm.
