Heat olive oil in a skillet over medium-high heat. Add diced onions, bell peppers, Italian seasoning, basil, salt, and pepper. Stir and sauté for 3-4 minutes until vegetables are soft. Remove and set aside.

Spread marinara or pizza sauce over each tortilla. Divide cooked vegetables, pepperoni, and grated mozzarella cheese evenly among the tortillas. Top each filled tortilla with another to form a quesadilla.

Using the same skillet, cook each quesadilla for 2-3 minutes on each side over medium heat until golden and crispy, and the cheese is melted. Repeat with remaining quesadillas.
