Preheat the air fryer to 380°F (193°C).

Line a cookie sheet with parchment paper.

Peel, core, and cut the apples into 8 wedges each.

Place flour in a medium bowl. In a shallow dish, beat eggs. Mix crushed graham crackers and sugar in another shallow dish.

Toss each apple wedge in the flour, then dredge in beaten eggs, and finally coat in the graham cracker and sugar mixture.

Coat the bottom of the air fryer basket with oil and place coated apple pieces in a single layer. Spray lightly with oil.

Air fry at 380°F (193°C) for 5 minutes, then flip the apple pieces and cook for 2 more minutes.
