Turn your oven on to 350°F and put parchment paper on your baking tray.

Break up almond paste, toss it into a bowl with the sugar, and stir well.

Stir in the almond extract and egg whites until smooth and combined.

Little by little, mix in the gluten-free flour till you’ve got a sticky dough.

Scoop some dough with a tablespoon, then roll it into a nice ball shape.

Stick some almond slices onto every dough ball.

Pop them in the oven for 15 to 18 minutes, until the edges are nice and golden.

Leave them on the tray for 5 minutes, then transfer to a rack to cool off.
