Apple Brie Stuffed Chicken (Print Format)

# Ingredients:

01 - 4 boneless, skinless chicken breasts (6 oz each)

02 - 1 medium Granny Smith apple, sliced

03 - 4 oz light Brie cheese, sliced

04 - 1/2 tsp salt
05 - 1/4 tsp black pepper
06 - 1/4 tsp dried thyme

07 - 1 tbsp olive oil
08 - 1 tbsp maple syrup
09 - 1 tbsp creamy Dijon mustard
10 - 1 tsp whole grain Dijon mustard

# Steps:

01 - Preheat the oven to 400°F (204°C). Line a baking sheet with parchment paper and set aside.
02 - Place chicken breasts on a cutting board. Using a sharp knife, slice each breast almost all the way through horizontally to create a pocket. Open each breast. Evenly distribute apple slices inside one side of each breast, then layer Brie cheese on top. Fold the other half over to enclose the filling and press gently to seal.
03 - Sprinkle salt, black pepper, and dried thyme evenly on both sides of each stuffed breast.
04 - Heat olive oil in a large skillet over medium-high heat. Working in batches of two, add stuffed breasts and sear for 1-2 minutes per side until golden brown. Transfer seared breasts to the prepared baking sheet.
05 - Combine maple syrup, creamy Dijon mustard, and whole grain Dijon mustard in a small bowl. Brush the glaze evenly over the tops of the stuffed chicken breasts.
06 - Place the baking sheet in the preheated oven. Bake for 20-25 minutes until chicken is fully cooked through and reaches an internal temperature of 165°F (74°C).

# Tips:

01 - Using both creamy and whole grain Dijon mustards adds texture and depth to the glaze, but the whole grain variety can be omitted if unavailable.
