Sauté the apples with butter, brown sugar, salt, and cinnamon in a medium non-stick pan until the butter and sugar caramelize. Avoid overcooking the apples. Set aside to cool.

Grease a 9” x 9” baking dish thoroughly. Toss the bread cubes with nutmeg and cinnamon, then place them into the dish. Whisk together whipping cream, milk, egg, egg yolk, sugar, vanilla extract, and salt. Pour the mixture over the bread cubes, pressing gently to ensure they soak completely. Let it sit while preparing the crumble topping.

Preheat the oven to 350°F (175°C). Combine baking powder, rolled oats, flour, and brown sugar in a large bowl. Rub the butter cubes into the dry ingredients using your hands until fully incorporated.

Layer the cooled apples evenly over the soaked bread mixture. Drizzle any caramelized sauce from the pan over the apples. Press the crumble together in handfuls and sprinkle it over the apple layer by breaking off small pieces.

Bake in the preheated oven for 35 to 40 minutes or until the top is golden and the custard is set. Insert a butter knife into the center to check for doneness. Cool on a wire rack for 20 to 30 minutes before serving with caramel sauce.
