Sweet Apple Hand Pies (Print Version)

# Ingredients:

01 - 1 teaspoon of vanilla flavoring.
02 - 5 big honeycrisp apples, chopped and peeled.
03 - 1/4 teaspoon cinnamon powder.
04 - 1 tablespoon of lemon juice.
05 - 3/4 cup piloncillo or plain brown sugar.
06 - 1/8 teaspoon of clove powder.
07 - 3 cups of basic all-purpose flour.
08 - A pinch of kosher salt.
09 - 1/2 cup plain white sugar.
10 - 2 large eggs, whole.
11 - 1 egg white, separated.
12 - 1 cup butter, chilled and diced.
13 - 2 tablespoons cold tap water.
14 - 4 tablespoons raw turbinado sugar for sprinkling.

# Instructions:

01 - Cook apples, piloncillo, lemon juice, vanilla, cinnamon, and cloves on medium heat for 15-20 minutes until softened.
02 - Mix flour, sugar, salt, butter, eggs, and water in a food processor. Turn it into a ball and split into 16 small portions.
03 - Flatten each portion into 6-7 inch rounds, layer between parchment, and refrigerate for half an hour.
04 - Put about 2½ tablespoons of the filling in each disk. Seal the edges by folding them over.
05 - Cut small slits, brush tops with egg white, and sprinkle sugar. Bake at 375°F for 25-30 minutes till they’re golden.

# Notes:

01 - The apple filling stays fresh in the fridge for up to 7 days.
02 - You can freeze the dough rounds for up to one month.
03 - Store-bought empanada wrappers are a handy alternative.
