# Ingredients:

→ Joes

01 - 2 teaspoons sesame oil
02 - 1/2 yellow onion, diced
03 - 3 cloves garlic, minced
04 - 1 inch ginger, peeled and finely minced
05 - Neutral oil, as needed
06 - 1/2 pound ground pork
07 - 1/2 pound ground beef
08 - 1/2 cup hoisin sauce
09 - 1/2 cup ketchup
10 - 2 tablespoons rice vinegar
11 - 2 tablespoons soy sauce, dark soy if available
12 - 2 tablespoons brown sugar
13 - 2 tablespoons chili crisp, chili sauce, or sambal
14 - 1/4 cup chopped cilantro
15 - 1/4 cup diced green onion
16 - 4 burger buns, toasted

→ Crispy Shallots

17 - 6 large shallots, peeled
18 - 1/3 cup flour
19 - Oil for frying
20 - 1 tablespoon kosher salt
21 - 1/2 teaspoon 5-spice powder

# Steps:

01 - Heat sesame oil in a large pan or wok, and add the onion. Stir until softened, about 3 to 4 minutes. Add the garlic, ginger, and a teaspoon of neutral oil. Stir until fragrant, approximately 1 minute. Add the ground pork and beef, cooking until no pink remains. Stir in hoisin sauce, ketchup, rice vinegar, soy sauce, brown sugar, and chili crisp. Simmer for 3 to 4 minutes, mixing well.
02 - Add cilantro and green onion to the pan, mix thoroughly, and serve on toasted buns. Top with crispy shallots.
03 - Slice shallots very thinly (a mandoline works well) and place in a large bowl. Toss with the flour. Heat 1 1/2 inches of oil in a medium pot to 350°F (175°C). Combine salt and 5-spice powder in a small bowl. Shake off excess flour from the shallots, then carefully add to the hot oil. Stir to separate and cook until golden brown. Remove to paper towels to drain, then dust with the 5-spice salt.
