01 -
Preheat your smoker to 350°F.
02 -
Cube cheddar cheese into ½" - ¾" cubes and set aside.
03 -
Slice bacon slices in half and set aside.
04 -
In a mixing bowl, combine the ground beef, egg, and burger seasoning. Mix until well combined.
05 -
Take 2-3 oz of the beef mixture, form a ball, and stuff a cheese cube into the center. Ensure all seams are sealed tightly.
06 -
Lay down two half slices of bacon in an 'X' shape. Place the meatball on top and wrap the bacon around it. Secure with toothpicks.
07 -
Place the bacon-wrapped meatballs in the smoker and cook for 30-35 minutes until the internal temperature of the meat reaches 165°F and the bacon is cooked to your liking.
08 -
For the last 5 minutes, brush BBQ sauce on top of each meatball and let it glaze with the lid closed.
09 -
Remove the bacon cheeseburger bombs from the smoker and let them rest for about 10 minutes before serving hot.
