02 - 2 Tbsp bacon drippings or olive oil
03 - 2 tsp kosher salt
04 - 1 tsp black pepper
05 - 1/4 tsp crushed red pepper flakes (optional)
06 - 1 cup Coca Cola

→ Bacon Cheeseburgers

07 - 2 lbs ground beef (85/15 or 80/20)
08 - 1/4 cup barbecue sauce (e.g., Sweet Baby Ray's)
09 - 2 tsp seasoned salt
10 - 1 tsp black pepper
11 - 1 tsp granulated garlic
12 - 1 tsp onion powder
13 - 6 slices cheddar cheese
14 - 6 brioche buns, buttered and toasted or grilled
15 - 6 slices thick-cut bacon, cooked crisp
16 - Toppings: sliced tomatoes, lettuce, pickles, condiments (for serving)

# Steps:

01 - Cook bacon in a large skillet over medium-high heat until crisp. Remove the bacon and set aside on paper towels to drain. Reserve the drippings in the skillet.
02 - Add the sliced onion rings to the skillet with bacon drippings (or olive oil). Add kosher salt, black pepper, and crushed red pepper flakes (if using). Cook uncovered over medium heat, stirring occasionally, for 10-15 minutes until onions are translucent and softened.
03 - Pour Coca Cola into the skillet with the onions and stir. Continue cooking uncovered over medium-low heat for 20-30 minutes until liquid reduces and onions are caramelized and browned. Remove from heat and set aside.
04 - In a mixing bowl, combine ground beef, barbecue sauce, seasoned salt, black pepper, granulated garlic, and onion powder. Mix with your hands until evenly combined. Divide into six patties and press an indentation into the center of each patty. Chill the patties until ready to grill.
05 - Preheat a grill to medium-high heat and oil the grates. Place the patties on the grill and cook 5-8 minutes on the first side, then flip and cook to your desired doneness (165°F for well done). In the last few minutes of grilling, top each patty with a slice of cheddar cheese. Remove patties to a platter.
06 - Place cooked patties on toasted brioche buns. Top with crisp bacon, caramelized Coca Cola onions, tomato slices, lettuce, pickles, and condiments of choice. Serve immediately.
