# Ingredients:

→ Main Ingredients

01 - 8-10 slices bacon, chopped
02 - 6-7 oz kielbasa smoked sausage, sliced and quartered
03 - 1 lb yellow potatoes, diced
04 - 1/2 yellow onion, diced
05 - 1/2 green bell pepper, diced
06 - 1/2 red bell pepper, diced
07 - 1-2 tsp all-purpose seasoning blend
08 - 1/2-1 tsp Creole seasoning
09 - 1/8-1/4 tsp black pepper
10 - 4-6 eggs, salt and pepper to season
11 - 1 cup shredded cheese, sharp cheddar or any preferred flavor
12 - Chili crisp oil (optional, for topping)
13 - 2-3 tsp sliced green onions, for garnish

# Steps:

01 - Cook the chopped bacon in a large skillet over medium heat until crispy. Remove and set aside. Drain all but 1 tablespoon of grease from the skillet.
02 - Add the sliced kielbasa sausage to the skillet and cook until browned and crispy around the edges. Remove and set aside.
03 - Microwave the diced potatoes for 5 minutes. Add the potatoes to the skillet and cook for about 5 minutes until beginning to crisp.
04 - Add the onion and bell peppers to the skillet. Season with the all-purpose seasoning and Creole seasoning, then continue cooking until the potatoes are crispy on the outside and tender on the inside.
05 - Stir the cooked bacon and sausage back into the skillet.
06 - Create a well in the skillet and crack the eggs into it. Add a little bacon grease if needed to prevent sticking. Season the eggs lightly with salt and pepper.
07 - Sprinkle shredded cheese around the skillet over the potatoes and sausage mixture. Cover with a lid and cook for 3–4 minutes, or until the eggs are cooked to your liking. Finish with chili crisp oil and garnish with sliced green onions before serving.

# Tips:

01 - Microwave the potatoes before pan-frying to speed up the cooking process and ensure a tender interior.
02 - Use any cheese variety that complements your taste preferences. Sharp cheddar works exceptionally well.
03 - If you don't have chili crisp oil, feel free to skip it or replace it with a dash of hot sauce.
