Salmon Dinner with Butter (Print Version)

# Ingredients:

01 - 4 boneless salmon fillets
02 - 18 asparagus spears (about 3 bunches), trimmed at the base
03 - 1 pound small potatoes (like baby or fingerlings), cut in half

→ Garlic Butter Sauce

04 - 2 tablespoons dry white wine (or 1/4 cup chicken broth, low-sodium)
05 - 1/3 cup fresh lemon juice
06 - 2 tablespoons parsley, chopped finely
07 - 1/2 cup melted butter, unsalted
08 - 2 1/2 tablespoons garlic, minced and split

→ Seasonings & Extras

09 - 1 lemon, sliced for presentation
10 - 1 1/2 teaspoons salt, in two portions
11 - 1/2 teaspoon freshly cracked pepper, also split
12 - 2 tablespoons olive oil

# Instructions:

01 - Crank the oven to 400°F (200°C) and get a large sheet pan ready. Toss your halved potatoes with olive oil, a pinch of pepper, 1/2 teaspoon of salt, and 1/2 tablespoon of garlic. Spread them out evenly and let them roast for 15 minutes till they start browning and softening up.
02 - Move the potatoes to one part of the tray. Place the salmon down the middle and rub them with 1 1/2 tablespoons of minced garlic and the parsley. Line the other edge of the pan with the asparagus.
03 - Stir together 1/4 cup melted butter and 1/4 cup lemon juice. Drizzle it over both the salmon and asparagus. Sprinkle the rest of the salt and pepper over everything.
04 - Slide the tray back in and bake until salmon’s flaky and the potatoes are golden and fork-soft—takes about 10 minutes. If you like crispy edges, broil everything for an extra 2 minutes before taking it out.
05 - While the tray is cooking, grab a small bowl and mix the leftover garlic, butter, lemon juice, and your wine or broth.
06 - Dish out the salmon, potatoes, and asparagus while they’re nice and warm. Drizzle the sauce over the top and add some lemon slices for a nice touch.
