Peel the potatoes, then slice into sticks about 1/4" thick.

Spread the fries evenly between the two trays.

Toss 1 1/2 teaspoons of cornstarch and 1/4 teaspoon of salt over each tray.

Pour a tablespoon of olive oil onto each tray, mixing everything to coat.
