Bang Bang Chicken Fried Rice (Print Format)

Spicy-sweet fried rice with crispy chicken, fresh veggies, and tangy bang bang sauce for a vibrant dinner.

# Ingredients:

→ Chicken

01 - 1 ½ pounds boneless skinless chicken breasts, cut into 1-inch cubes
02 - 1 tablespoon vegetable oil
03 - 1 teaspoon paprika
04 - 1 teaspoon garlic powder
05 - 1 teaspoon kosher salt
06 - ½ teaspoon black pepper
07 - 1 cup (250 g) Bang Bang sauce, divided

→ Fried Rice

08 - 2 tablespoons sesame oil, divided
09 - 4 large eggs, beaten
10 - ½ teaspoon kosher salt
11 - 2 large carrots, diced
12 - 1 large white onion, diced
13 - ¼ cup green onions, diced, plus more for garnish
14 - 1 teaspoon garlic, minced
15 - 4 cups long-grain white rice, cooked and cooled
16 - ¼ cup (½ stick / 57 g) unsalted butter, melted
17 - 1 teaspoon lemon juice
18 - 2 tablespoons soy sauce
19 - ⅓ cup (45 g) frozen peas

# Steps:

01 - In a large bowl, toss the cubed chicken with oil, paprika, garlic powder, salt, and pepper until evenly coated. Preheat air fryer to 400°F. Place chicken in a single layer in the air fryer basket and air fry for 11–12 minutes, flipping halfway through, until golden and internally cooked to 165°F. Transfer the cooked chicken to a medium bowl, tent with aluminum foil, and set aside.
02 - To a large skillet over high heat, add 1 tablespoon sesame oil. Once hot, pour in the beaten eggs, sprinkle with salt, and scramble gently until soft curds form. Transfer the eggs to a plate and set aside.
03 - Reduce heat to medium-high. Add remaining sesame oil, carrots, onion, and green onions to the skillet. Cook for about 5 minutes, or until carrots are tender. Add minced garlic and cook for 1 additional minute.
04 - Add the cooled rice to the skillet with the vegetables. Break it up with a spatula and stir. Cook for 2–3 minutes, stirring occasionally, until heated through.
05 - Stir in the scrambled eggs, melted butter, lemon juice, soy sauce, and peas. Mix well and cook for 2–3 more minutes until everything is evenly coated and hot.
06 - Toss the cooked chicken with ½ cup Bang Bang sauce. Save the remaining sauce for drizzling over the dish.
07 - Top the fried rice with the Bang Bang chicken. Drizzle with additional Bang Bang sauce if desired, and garnish with extra green onions before serving.

# Tips:

01 - You can cook the chicken in a skillet if you don't have an air fryer. Heat oil in a large skillet over medium-high heat, cook seasoned chicken in a single layer for 6–8 minutes, turning to achieve a golden exterior and reaching an internal temperature of 165°F.
