Set oven temperature to 190°C (170°C fan). Lightly grease a baking dish.

Cut tops off bell peppers and remove seeds and membranes. Place upright in the prepared baking dish.

Heat a large frying pan over medium heat. Add beef mince and cook thoroughly, breaking it up as it browns.

Add the finely diced mushrooms and onion to the beef. Cook for 2 to 3 minutes until softened.

Stir in BBQ sauce, chopped bacon, and diced gherkins. Season with salt and black pepper according to taste.

Fill each bell pepper with the meat mixture, pressing it down firmly. Sprinkle grated Cheddar evenly on top.

Cover dish loosely with foil. Bake for 25 to 30 minutes until peppers are tender and cheese is melted and bubbling.

Remove from oven, sprinkle with chopped fresh parsley, and serve immediately while hot.
