# Ingredients:

01 - 1 lb ground beef
02 - 1/2 cup caramelized onions, finely chopped
03 - 1/2 cup pickles, finely chopped
04 - 1 cup cheddar cheese, grated or diced
05 - 1 tablespoon Dijon or American mustard
06 - 3 garlic cloves, crushed
07 - 1 tablespoon pickle juice
08 - 1/2 teaspoon salt
09 - Black pepper, to taste
10 - 1 teaspoon fish sauce
11 - 6 slices bacon, cut in half

12 - 12 mini tortillas
13 - Olive oil, for cooking
14 - 1 cup cheddar cheese, grated
15 - 1 head Romaine lettuce, shredded
16 - 6 pickle slices, chopped
17 - 1/2 cup barbecue sauce
18 - 1/2 cup garlic aioli or burger sauce

# Steps:

01 - Combine ground beef, caramelized onions, chopped pickles, 1 cup cheddar cheese, mustard, crushed garlic, pickle juice, salt, fish sauce, and black pepper in a mixing bowl. Mix thoroughly to distribute seasoning evenly.
02 - Place a heaping tablespoon of the beef mixture onto each mini tortilla. Spread evenly to the edges using the back of a spoon. Top each with two bacon halves.
03 - Heat olive oil in a non-stick pan over high heat. Place each taco topping-side down in the pan and press firmly with a spatula to 'smash' onto the tortilla. Cook for 4 minutes, then flip, sprinkle with 1 tablespoon grated cheddar cheese, cover, and cook for 30 seconds until cheese melts. Remove and repeat with remaining tacos.
04 - Drizzle barbecue sauce over each taco. Top with shredded Romaine lettuce, chopped pickles, and dollops of garlic aioli or burger sauce. Serve hot for optimal crispness.
