Preheat your oven to 350°F. Lightly grease a 9x13 inch baking dish with butter.

Cook the sausage in a pan over medium-low heat, crumbling it as it browns. Once cooked through, set it aside and leave the drippings in the pan.

Melt the butter in the pan, then sprinkle over flour and whisk, allowing it to cook for about 1 minute. Gradually add the milk, whisking as you pour, until the gravy comes together. Scrape up the brown bits from the bottom of the pan. Add cajun seasoning, salt, and pepper. Taste and adjust seasonings as needed.

Add the biscuits to the bottom of the pan, pressing them gently until they cover most of the surface layer.

Scatter the cooked sausage over the biscuits and top with shredded colby jack cheese.

In a medium bowl, whisk together the eggs, half and half, salt, and pepper. Pour this mixture evenly over the biscuits and sausage.

Pour the prepared gravy over the top of the entire casserole. Place the dish in the oven and bake for 35-45 minutes, or until the casserole has puffed up and is golden brown on top.

Let the casserole rest for a few minutes before slicing and serving. Drizzle with pancake syrup for best enjoyment.
