Melty Blackberry Jalapeno Chicken (Print Format)

Chicken filled with melted cheese, blackberries, and jalapeno, baked to juicy perfection in a flavorful skillet sauce.

# Ingredients:

01 - 4 boneless skinless chicken breasts
02 - 2 teaspoons oregano or Italian seasoning
03 - 1 teaspoon garlic powder
04 - Sea salt and pepper, to taste
05 - 1 cup fresh blackberries, slightly mashed with a fork
06 - 4 small jalapeno peppers, sliced, most seeds removed
07 - 4 thick slices mozzarella or provolone cheese
08 - 2 tablespoons avocado oil, grass-fed butter, unrefined coconut oil, or olive oil
09 - 1/2 cup dry white wine or chicken bone broth
10 - Handful of fresh parsley or basil, chopped

# Steps:

01 - Preheat your oven to 375°F (190°C).
02 - Rub your chicken breasts with oregano, garlic powder, sea salt, and pepper to taste on all sides.
03 - Slice each chicken breast down the middle lengthwise, but do not cut all the way through. Create a large pocket for the fillings.
04 - Stuff the pockets with mozzarella or provolone cheese slices, jalapeno slices, and slightly mashed blackberries. Secure with toothpicks if necessary.
05 - Heat oil in a large oven-safe skillet over medium heat. Add the chicken and sear until golden brown on both sides, about 4 minutes per side.
06 - Add wine or chicken bone broth to deglaze the skillet and incorporate flavor.
07 - Transfer the skillet to your preheated oven and bake for 12–15 minutes, or until the chicken is cooked through to an internal temperature of 165°F (73.9°C).
08 - Garnish the cooked chicken with freshly chopped parsley or basil before serving.

# Tips:

01 - Ensure the chicken is cooked through to 165°F (73.9°C) as measured by a food thermometer.
