Blueberry Cheesecake Bars (Print Format)

Creamy bars with blueberry swirl on a cookie crust. Fancy enough to impress but simple to make.

# Ingredients:

→ Blueberry Topping

01 - 1/2 cup granulated sugar
02 - 3 cups fresh or frozen blueberries

→ Crust Made With Graham Crackers

03 - 6 tablespoons melted butter
04 - 2 tablespoons white sugar
05 - 1 1/2 cups finely crushed graham crackers

→ Creamy Cheese Mixture

06 - 16 ounces (2 packs) cream cheese, softened
07 - 1 teaspoon pure vanilla
08 - 1/2 cup granulated sugar
09 - 2 large eggs

# Steps:

01 - In a small pot, mix blueberries with sugar. With the lid on, cook over low heat for 10 minutes. Let it cool and refrigerate for 1-2 hours to thicken.
02 - Turn oven to 350°F. Stir together graham crumbs, sugar, and melted butter. Press mixture into a greased baking dish (9x13 size).
03 - Blend softened cream cheese with sugar until smooth. Beat in eggs one by one and finish by mixing in the vanilla. Pour it over the crust evenly.
04 - Lay two thick lines of chilled blueberry sauce along the pan lengthwise. Use a skewer or chopstick to swirl it gently without touching the crust.
05 - Place in oven and bake for 40 to 45 minutes until it sets in the center. Once out of the oven, cool thoroughly before slicing into bars.
