Trim the chicken thighs, then lay them in the slow cooker.

Combine garlic, honey, soy sauce, vinegar, bourbon, ginger, brown sugar, and chili flakes in a bowl. Whisk well.

Pour the sauce over the chicken in the cooker. Use the high setting for 4 hours or low for about 6.

Take the chicken out and slice it into rough chunks.

Whisk cornstarch and water in a bowl. Stir the mixture into the sauce in the slow cooker.

Toss the chopped chicken back into the sauce. Let it cook until the sauce bubbles up.

Sprinkle green onions on top before serving. Goes great over rice.
