Heat a skillet over medium heat and add ground pork. Break it up with a wooden spoon or spatula and cook until fully browned and no longer pink. Drain any grease and set aside.

Heat a saucepan over medium heat and add milk. Stir in flour, salt, and pepper, and continue cooking until thickened. Adjust consistency by adding more milk for a thinner gravy or more flour for a thicker gravy.

Stir the cooked pork sausage into the gravy. Remove the saucepan from heat and set aside.

Preheat oven to 425°F (220°C).

Cut each bacon strip into four pieces and cook in a large skillet over medium heat until desired doneness is reached. Remove bacon and set aside, leaving the grease in the skillet.

Add spinach to the skillet with the reserved bacon grease. Cook for 2 minutes or until wilted, then remove and set aside.

Spread sausage gravy evenly onto each flatbread. Top with shredded cheese, wilted spinach, sliced tomatoes, and cooked bacon.

Crack two eggs into a small bowl then gently slide them onto one flatbread. Repeat for the second flatbread. Bake for 10 minutes or until cheese is melted and eggs reach desired doneness.
