Breakfast Flatbreads Sausage Bacon (Print Format)

Flatbreads topped with sausage gravy, bacon, eggs, cheese, spinach, and tomatoes for a hearty start.

# Ingredients:

→ Sausage Gravy

01 - 1/2 pound ground pork sausage
02 - 4 cups milk
03 - 3/4 cup flour
04 - 1 teaspoon salt
05 - 1 teaspoon ground black pepper

→ Flatbreads

06 - 5 strips bacon
07 - 2 flatbreads
08 - 1/2 cup spinach, lightly packed
09 - 1 cup Cheddar Jack cheese, shredded
10 - 4 cherry tomatoes, sliced
11 - 4 eggs

# Steps:

01 - Heat a skillet over medium heat and add ground pork. Break it up with a wooden spoon or spatula and cook until fully browned and no longer pink. Drain any grease and set aside.
02 - Heat a saucepan over medium heat and add milk. Stir in flour, salt, and pepper, and continue cooking until thickened. Adjust consistency by adding more milk for a thinner gravy or more flour for a thicker gravy.
03 - Stir the cooked pork sausage into the gravy. Remove the saucepan from heat and set aside.
04 - Preheat oven to 425°F (220°C).
05 - Cut each bacon strip into four pieces and cook in a large skillet over medium heat until desired doneness is reached. Remove bacon and set aside, leaving the grease in the skillet.
06 - Add spinach to the skillet with the reserved bacon grease. Cook for 2 minutes or until wilted, then remove and set aside.
07 - Spread sausage gravy evenly onto each flatbread. Top with shredded cheese, wilted spinach, sliced tomatoes, and cooked bacon.
08 - Crack two eggs into a small bowl then gently slide them onto one flatbread. Repeat for the second flatbread. Bake for 10 minutes or until cheese is melted and eggs reach desired doneness.
