Breakfast Quesadilla Bacon Eggs (Print Format)

Fluffy eggs, crispy bacon, and melted cheese fill golden tortillas—delicious and quick for morning meals.

# Ingredients:

01 - 2 medium flour tortillas
02 - 8 oz bacon, chopped
03 - 2 large eggs
04 - 2 Tbsp whole milk
05 - ⅛ tsp salt
06 - ⅛ tsp ground black pepper
07 - 1 cup shredded cheese

# Steps:

01 - In a bowl, whisk together eggs, milk, salt, and pepper until well combined.
02 - Add chopped bacon to a skillet and cook on medium heat for about 6-8 minutes, until crispy and golden. Remove and set aside.
03 - Remove all the bacon grease from the skillet, except for about 2 teaspoons. Heat the skillet on medium-high heat.
04 - Pour the scrambled egg mixture into the hot skillet and cook for about 2-3 minutes, mixing and scrambling as it cooks.
05 - Once the eggs are done, add the cooked bacon to the eggs and mix to combine.
06 - Lay out the tortillas and add cheese and the egg mixture on one half of the tortillas, dividing evenly between both tortillas. Fold the empty side of the tortilla over the full side, creating a half-moon shape.
07 - Carefully add the quesadillas to a clean skillet and cook on medium-low heat. Cook until both sides of the tortillas are golden and crisp and the cheese has melted.
08 - Remove the tortillas from the skillet and slice into 2-3 pieces. Serve immediately with desired sides.
