                In a bowl, whisk together eggs, milk, salt, and pepper until well combined.

                Add chopped bacon to a skillet and cook on medium heat for about 6-8 minutes, until crispy and golden. Remove and set aside.

                Remove all the bacon grease from the skillet, except for about 2 teaspoons. Heat the skillet on medium-high heat.

                Lay out the tortillas and add cheese and the egg mixture on one half of the tortillas, dividing evenly between both tortillas. Fold the empty side of the tortilla over the full side, creating a half-moon shape.

                Carefully add the quesadillas to a clean skillet and cook on medium-low heat. Cook until both sides of the tortillas are golden and crisp and the cheese has melted.
