Healthy Seafood Dinner (Print Version)

# Ingredients:

01 - 4 pieces of cod, about 6 oz each

→ Sauce with Lemon and Butter

02 - 60 grams (1/4 cup) of melted unsalted butter
03 - 2 tablespoons of olive oil
04 - Juice from 1 lemon (about 3 tablespoons)
05 - 3 cloves of garlic, finely chopped
06 - 1 teaspoon of grated lemon peel
07 - 1/2 teaspoon thyme (use 1 teaspoon fresh if preferred)
08 - 1/2 teaspoon of paprika
09 - Salt and a dash of black pepper, adjust to taste

→ Optional Toppings

10 - Fresh parsley, chopped (2 tablespoons)
11 - Lemon wedges for serving

# Instructions:

01 - Set your oven temperature to 400°F (200°C) and lightly oil a baking dish or use a nonstick spray.
02 - Combine the melted butter, olive oil, lemon juice, garlic, zest, paprika, thyme, salt, and pepper in a tiny bowl. Whisk until smooth.
03 - Lay the cod fillets flat in the greased baking dish. Coat them generously with the lemon butter mixture, spreading it evenly.
04 - Place in the oven for 12 to 15 minutes, or until the cod looks opaque and splits apart easily with a fork. Depends on how thick your fillets are.
05 - Top with a sprinkle of parsley and some lemon wedges on the side. Goes great with veggies, salad, or some rice!

# Notes:

01 - Turn up the heat: Add a dash of chili flakes to the butter sauce if you like it spicy.
02 - Try other fish: Works wonderfully with tilapia, haddock, or other mild white fish types.
03 - Leftovers: Keep in a sealed container in the fridge for up to 3 days.
04 - Pair with sides: Roasted veggies or a fresh, leafy salad complete the dish.
