Buttery Cookie Sandwich (Print Version)

# Ingredients:

01 - 1/4 cup packed brown sugar.
02 - 1 large egg.
03 - 3 tbsp heavy cream.
04 - 1 tsp vanilla extract.
05 - 1/2 cup butter, at room temperature.
06 - 1 cup peanut butter, smooth.
07 - 1 cup white sugar.
08 - 1 cup confectioners' sugar.

# Instructions:

01 - Set your oven to 350°F and get your baking sheet ready with some parchment on top.
02 - Stir together peanut butter, egg, sugar, and vanilla until the mixture’s nice and smooth.
03 - Roll dough into balls, arrange on the baking sheet, and press down with a fork to add crisscross marks.
04 - Pop it in the oven for about 10-12 minutes. Once the edges look golden, let them cool completely.
05 - Whip up the butter and brown sugar until creamy. Beat in the cream and confectioners' sugar to make it fluffy.
06 - Spread the filling over one cookie, then sandwich it with another on top.
