Heat olive oil in a skillet over medium heat. Cook the andouille sausage or preferred smoked sausage until crispy, then remove and set aside.

Sauté the onion, green pepper, and jalapeño (if using) along with the seasonings for about 5 minutes.

Add the tomato paste and cook while stirring for about 2 minutes.

Add the cooked sausage back into the skillet along with the uncooked rice, diced tomatoes, and beef broth. Stir until combined.
