One Pot Cajun Smoked Sausage (Print Format)

Bold Cajun flavors, smoked sausage, and rice come together for a hearty, one-pot dinner perfect for meal prep.

# Ingredients:

01 - 1 tbsp olive oil
02 - 13 oz sliced Cajun-style andouille smoked sausage or any smoked sausage
03 - 1 yellow onion, diced
04 - 1 green pepper, diced
05 - 1 jalapeño, diced (optional)
06 - 1 tsp Fire and Smoke Society's The Usual All Purpose Blend or any preferred seasoning blend
07 - 1 tsp Slap Ya Mama seasoning (omit for a milder version)
08 - 1 tsp garlic powder
09 - 1 tsp onion powder
10 - 4-5 garlic cloves, minced
11 - 1 tbsp tomato paste
12 - 1 cup uncooked long grain white rice (use Basmati for ease of cooking)
13 - 14.5 oz can of fire-roasted diced tomatoes
14 - 2 cups beef or chicken broth

# Steps:

01 - Heat olive oil in a skillet over medium heat. Cook the andouille sausage or preferred smoked sausage until crispy, then remove and set aside.
02 - Sauté the onion, green pepper, and jalapeño (if using) along with the seasonings for about 5 minutes.
03 - Stir in minced garlic and cook for about 1 minute.
04 - Add the tomato paste and cook while stirring for about 2 minutes.
05 - Add the cooked sausage back into the skillet along with the uncooked rice, diced tomatoes, and beef broth. Stir until combined.
06 - Bring the mixture to a boil, cover, reduce the heat to a simmer, and cook for approximately 20 minutes or until the rice is fully cooked.
07 - Stir, taste, and adjust seasonings as needed before serving.

# Tips:

01 - To freeze, allow the dish to cool completely and transfer it to an airtight container or freezer bag. It can be frozen for up to three months. Thaw overnight in the refrigerator and reheat on the stovetop with a splash of broth if needed. Individual portions can also be microwaved until warmed through.
