Cajun Smothered Green Beans (Print Format)

Tender green beans and potatoes cooked with smoky bacon and robust Cajun seasoning in a savory sauce.

# Ingredients:

→ Meat

01 - 6 slices thick cut bacon, diced

→ Vegetables

02 - 1 medium sweet onion, diced
03 - 4 cloves garlic, minced
04 - 1.5 pounds fresh green beans, trimmed and cut into 2-inch pieces
05 - 1 pound baby yellow potatoes, halved

→ Dry Ingredients

06 - 2 tablespoons all-purpose flour
07 - 1 teaspoon Cajun or Creole seasoning
08 - 1 teaspoon smoked paprika
09 - 1 teaspoon onion powder
10 - 1 teaspoon garlic powder
11 - 1 teaspoon cracked black pepper
12 - Salt, to taste

→ Liquids

13 - 3 cups chicken stock

# Steps:

01 - Heat a large heavy-bottomed pot over medium heat and add diced bacon. Cook until fat has rendered and edges start to crisp. Add diced onion and sauté for 5 minutes until soft and translucent, then add minced garlic and cook for 30 seconds until fragrant.
02 - Sprinkle flour over the bacon mixture and stir constantly for 2 to 3 minutes to cook out the raw flour taste. Incorporate Cajun seasoning, smoked paprika, onion powder, garlic powder, and cracked black pepper, stirring continuously.
03 - Slowly pour in chicken stock while scraping the bottom of the pot to deglaze and incorporate browned bits. Add the green beans and stir to submerge in liquid. Bring to a boil, then reduce heat to a simmer and cover. Cook for 30 minutes.
04 - Add halved baby yellow potatoes to the pot, stir gently to combine, cover, and simmer for an additional 25 minutes or until potatoes and green beans reach desired tenderness.
05 - Remove the lid and simmer uncovered for about 10 minutes to thicken and reduce the sauce. Taste and adjust seasoning with salt or additional Cajun seasoning as needed. Serve immediately while hot.

# Tips:

01 - Fresh green beans provide the best texture, but frozen beans can be used in a pinch. Adjust Cajun seasoning to your preferred heat level. Leftovers keep refrigerated for up to 4 days or freeze for several months.
02 - To add richness, stir in a small pat of butter at the end for a silky finish.
