Heat olive oil in a pot over medium heat. Add chicken and cook until lightly browned. Remove and set aside.

In the same pot, add onion, bell pepper, and garlic. Sauté until soft.

Return chicken to the pot. Stir in Cajun seasoning, cumin, paprika, oregano, salt, and pepper.

Add diced tomatoes, beans, and chicken broth. Stir and bring to a gentle boil.

Reduce heat and simmer for 15–20 minutes until thickened and chicken is tender.

Stir in butter, sour cream, and Parmesan cheese until melted and creamy.

Taste and adjust seasoning.
