Southern Candied Yams (Print Version)

# Ingredients:

01 - 1 cup granulated sugar.
02 - 3/4 cup light or dark brown sugar.
03 - 1/4 tsp fine salt.
04 - 2 tsp ground cinnamon.
05 - 2 tbsp pure vanilla.
06 - 2 lbs peeled sweet potatoes.
07 - 4 tbsp thawed orange juice concentrate.
08 - 1/4 tsp ground ginger.
09 - 1 stick unsalted butter.
10 - 1 tsp ground nutmeg.

# Instructions:

01 - Peel the yams, rinse them well, and slice into 1/2-inch thick pieces.
02 - Dump all the listed ingredients into a pot and place it on medium heat.
03 - Mix everything until the yams are totally coated in the sugar and butter sauce.
04 - Turn the heat up to boil, then lower it and cover the pot. Cook gently for 50 minutes, stirring now and then.
05 - Take the lid off and turn up the heat to medium.
06 - Boil the mix for about 10 minutes while stirring off and on until the syrup sticks to the yams.
07 - Put the yams into a warm oven until you're ready to serve.

# Notes:

01 - Can prep it up to 3 days before serving.
02 - Smaller yams are easier to handle for slicing.
03 - Taste the syrup and adjust sugar if needed.
04 - Handle carefully when soft to avoid breaking.
