Preheat the oven to 350°F. Line a cookie sheet with parchment paper or a silicone baking mat.

Melt butter in a small skillet over low-medium heat. Add diced apples, cinnamon, and sugar. Cook, stirring occasionally, for about 15 minutes or until the apples are just beginning to turn translucent. Cool for at least 10 minutes.

Unroll crescent rolls onto a cutting board, keeping them in a single rectangle. Press the seams together to form one large rectangle. Spread the prepared apple mixture evenly over the dough. Roll the dough tightly and slice into 8 equal portions using a serrated knife. Place rolls on the baking sheet, either spaced apart for crispy edges or close together for a doughier center.

Bake in the preheated oven for 15-25 minutes or until the tops are golden and the rolls are cooked through.

While the rolls are baking, melt butter and brown sugar together in a small saucepan. Cook for 2 minutes, stirring constantly. Remove from heat and whisk in powdered sugar, followed by vanilla and 2 tablespoons of cream. Add more cream if needed to achieve the desired consistency.

You may skip making the frosting and instead serve the rolls with store-bought caramel ice cream topping.
