Carne Asada Gorditas Mexico (Print Format)

Juicy carne asada fills fluffy gorditas, finished with vibrant toppings and creamy guacamole for a true street-food experience.

# Ingredients:

→ Carne Asada

01 - 1½ lbs skirt steak or flank steak
02 - 2 tbsp olive oil
03 - Juice of 1 lime
04 - 2 cloves garlic, minced
05 - 1 tsp ground cumin
06 - 1 tsp chili powder
07 - 1 tsp smoked paprika
08 - Salt and black pepper, to taste

→ Gorditas

09 - 2 cups masa harina
10 - 1½ cups warm water
11 - ½ tsp salt

→ Fillings & Toppings

12 - Shredded lettuce
13 - Diced white onion
14 - Shredded Mexican cheese blend or queso Oaxaca
15 - Guacamole or sliced avocado
16 - Salsa roja or salsa verde
17 - Sour cream (optional)

# Steps:

01 - Combine olive oil, lime juice, garlic, cumin, chili powder, paprika, salt, and pepper. Marinate the steak for 20–30 minutes.
02 - Grill or sear steak over high heat for 3–4 minutes per side until charred and medium-rare to medium. Rest the steak, then chop finely.
03 - Mix masa harina and salt. Gradually add warm water, mixing until a soft dough forms.
04 - Divide the dough into 6 equal balls and flatten each into thick discs.
05 - Cook the gorditas on a hot skillet or griddle for 2–3 minutes per side until golden and puffed.
06 - Carefully slice open each gordita to form a pocket.
07 - Fill the gorditas with chopped carne asada, lettuce, cheese, onion, and guacamole. Finish with salsa and sour cream if desired. Serve hot.

01 - For extra flavor, crisp the chopped carne asada briefly on the skillet with a little beef drippings before stuffing the gorditas.
