Mix masa harina and salt. Gradually add warm water, mixing until a soft dough forms.

Divide the dough into 6 equal balls and flatten each into thick discs.

Cook the gorditas on a hot skillet or griddle for 2–3 minutes per side until golden and puffed.

Carefully slice open each gordita to form a pocket.

Fill the gorditas with chopped carne asada, lettuce, cheese, onion, and guacamole. Finish with salsa and sour cream if desired. Serve hot.
