Set your oven to 200°C (390°F) for traditional or 180°C (350°F) if using a fan oven.

Spread 1 tablespoon honey on top of each pastry square.

Scatter thyme, walnuts, blue cheese, Parmesan, salt, and pepper evenly over both sheets.

Carefully roll each pastry sheet into a tight log.

Slice each roll down the middle lengthwise.

Twist the two halves and shape them into a coil.

Put the coils on baking paper.

Use a pastry brush to coat them with milk.

Bake for about 25-30 minutes, or until they look puffed and golden on top.

Sprinkle extra thyme on top and eat while still warm.
