Cheese Nut Swirls (Print Version)

# Ingredients:

01 - 100g Parmesan, shredded.
02 - 100g blue cheese, broken into chunks.
03 - 2 sheets of square puff pastry.
04 - 50g walnuts, roughly chopped.
05 - A sprinkle of sea salt.
06 - Cracked black pepper to taste.
07 - 6-8 sprigs of thyme, leaves only.
08 - 2 tablespoons of honey.
09 - 1 tablespoon milk for brushing.

# Instructions:

01 - Set your oven to 200°C (390°F) for traditional or 180°C (350°F) if using a fan oven.
02 - Spread 1 tablespoon honey on top of each pastry square.
03 - Scatter thyme, walnuts, blue cheese, Parmesan, salt, and pepper evenly over both sheets.
04 - Carefully roll each pastry sheet into a tight log.
05 - Slice each roll down the middle lengthwise.
06 - Twist the two halves and shape them into a coil.
07 - Put the coils on baking paper.
08 - Use a pastry brush to coat them with milk.
09 - Bake for about 25-30 minutes, or until they look puffed and golden on top.
10 - Sprinkle extra thyme on top and eat while still warm.

# Notes:

01 - Keep the pastry cold until you’re ready so it puffs up nicely when baking.
02 - If filling spills out after cutting, gently press it back in.
03 - These taste best served fresh and warm.
