Cheese Shrimp Wraps (Print Format)

Shrimp, avocado, and two cheeses stuffed in tortillas. A quick, family-friendly meal you can easily tweak.

# Ingredients:

01 - Kosher or sea salt.
02 - 2 woolly ripe avocados, diced small.
03 - A cup's worth of thawed, drained frozen shrimp.
04 - 8 oz of crumbled queso fresco cheese.
05 - A couple cups of shredded Monterey Jack cheese.
06 - 16 small tortillas, made from corn.
07 - A small pinch of chili powder.
08 - Olive oil (a few teaspoons).

# Steps:

01 - On medium-high, heat up a teaspoon of olive oil in your skillet.
02 - Layer a tortilla in the pan, then pile on shrimp, crumbled cheese, diced avocado, seasoning, and Jack cheese.
03 - Cover it with another tortilla, flip it gently, and keep cooking till it turns golden.
04 - Rest it for a few minutes after removing it from the pan, then slice.
05 - Repeat the same steps for your next quesadillas, adding fresh oil when needed.
