02 - 300g thinly sliced beef
03 - 1 medium onion, finely sliced
04 - 1 bell pepper, thinly sliced
05 - 200g provolone cheese, shredded
06 - 2 cups heavy cream
07 - 2 tablespoons unsalted butter
08 - 2 tablespoons all-purpose flour
09 - 1 teaspoon garlic powder
10 - Salt and black pepper to taste
11 - Chopped fresh parsley for garnish

# Steps:

01 - In a large pan, sauté the sliced beef with onion and bell pepper until tender. Season with salt and pepper. Remove from heat and set aside.
02 - Boil the cheese-filled tortellini according to the package instructions. Drain and set aside.
03 - In a saucepan, melt butter over low heat, then whisk in flour to form a roux. Gradually add heavy cream while whisking continuously. Slowly incorporate the shredded provolone cheese, stirring until melted and smooth. Add garlic powder, salt, and black pepper to taste.
04 - Mix the cooked tortellini with the cheesesteak filling in a large pan. Pour the provolone sauce over the mixture, tossing gently to coat evenly.
05 - Transfer the mixture to a baking dish. Sprinkle additional shredded provolone on top and bake at 200°C for 5-10 minutes until the cheese is golden and bubbly.
06 - Garnish with freshly chopped parsley and serve immediately.

# Tips:

01 - Keep the heat low when making the cheese sauce to prevent curdling. Stir continuously for a smooth and creamy texture.
02 - For added texture, top with crispy fried onions or breadcrumbs before serving.
