# Ingredients:

→ Main Ingredients

01 - 1 lb ground beef
02 - 1/2 tsp salt
03 - 1/2 tsp pepper
04 - 2 tsp chili powder
05 - 1 tsp cumin
06 - 1 tsp dried cilantro
07 - 1 onion, chopped
08 - 1 tbsp minced garlic
09 - 10 small white corn tortillas, cut into squares
10 - 20 oz mild enchilada sauce (2 cans, 10 oz each)
11 - 1 cup Chihuahua cheese
12 - 1/2 cup shredded Colby Jack cheese
13 - Sour cream, for serving
14 - Cilantro, for serving

# Steps:

01 - Brown 1 lb of ground beef in a large oven-safe skillet over medium-high heat. Add salt, pepper, chili powder, cumin, dried cilantro, and chopped onion. Cook until the beef is cooked through and the onions have softened. Drain any grease from the skillet.
02 - While the ground beef is cooking, cut 10 small white corn tortillas into squares.
03 - Add minced garlic and the cut-up corn tortillas to the skillet. Stir to combine with the ground beef, then pour in 20 oz of mild enchilada sauce. Add a handful of Chihuahua cheese and stir everything together thoroughly.
04 - Sprinkle shredded Colby Jack cheese over the mixture in the skillet. Place the skillet in an oven preheated to 400°F and bake for about 5 minutes, or until the cheese is melted.
05 - Top individual servings with chopped cilantro and sour cream. Serve immediately.

# Tips:

01 - Consider substituting ground turkey or cubed chicken breast for the ground beef.
02 - Yellow corn tortillas can be used as an alternative to white corn tortillas.
03 - For additional flavor, a taco seasoning packet can replace the homemade seasoning blend.
04 - Fry tortillas before adding them to the skillet for a crispier texture.
