# Ingredients:

01 - 2 pounds ground beef
02 - ½ yellow onion, diced
03 - 1 tablespoon minced garlic
04 - 1 packet taco seasoning
05 - 1 10-ounce can of Rotel, undrained
06 - 1 11-ounce can of Mexicorn, drained
07 - 2 cups taco blend cheese, shredded
08 - 1 9.25-ounce bag of Nacho Cheese Doritos, crushed
09 - Optional toppings: sour cream, Pico de Gallo

# Steps:

01 - Preheat oven to 350°F (175°C). In a large skillet over medium-high heat, add the ground beef and diced onions. Cook until no pink remains in the meat. Add the minced garlic and cook for 30-45 seconds, then drain excess grease.
02 - Add the taco seasoning, Rotel, and Mexicorn to the skillet. Stir until thoroughly combined.
03 - In a 7x11-inch casserole dish, layer half of the meat mixture, followed by a layer of cheese, and then a layer of crushed Doritos. Repeat the layers to complete the casserole.
04 - Bake at 350°F (175°C) for 15-20 minutes or until the cheese is fully melted.
05 - Top the casserole with fresh Pico de Gallo and sour cream before serving. Enjoy!

# Tips:

01 - Crushing the Doritos just before layering helps maintain their crisp texture in the casserole.
