01 - 1 lb ground beef
02 - 1 chopped onion
03 - 1 cup beef broth
04 - 1 cup milk
05 - 2 1/2 cups medium shell pasta
06 - 2 cans (10 oz each) mild enchilada sauce
07 - 1/2 tsp salt
08 - 1/2 tsp black pepper
09 - 2 tsp chili powder
10 - 1 tsp cumin
11 - 1 tsp dried cilantro
12 - 1/4 tsp cayenne pepper
13 - 1 tbsp minced garlic
14 - 2 cups shredded Colby Jack cheese
15 - Fresh cilantro for garnish
16 - Sour cream for serving

# Steps:

01 - In a large skillet over medium-high heat, brown the ground beef and the chopped onion. Drain excess grease when the beef is fully cooked.
02 - Add salt, pepper, chili powder, cumin, dried cilantro, and cayenne pepper to the skillet. Add minced garlic and stir well.
03 - Stir in the beef broth, enchilada sauce, uncooked pasta, and milk. Bring to a boil and immediately reduce to medium-low heat. Cover with a lid and cook for 12 minutes, stirring halfway to prevent sticking.
04 - Once the pasta is cooked, mix in 1 cup of cheese. Top with the remaining cheese and allow it to melt before serving.
05 - Garnish with freshly chopped cilantro and serve with sour cream. Enjoy your meal!

# Tips:

01 - Ensure the pasta is stirred halfway through cooking to prevent sticking and achieve an even texture.
