In a large skillet over medium-high heat, brown the ground beef and the chopped onion. Drain excess grease when the beef is fully cooked.

Add salt, pepper, chili powder, cumin, dried cilantro, and cayenne pepper to the skillet. Add minced garlic and stir well.

Stir in the beef broth, enchilada sauce, uncooked pasta, and milk. Bring to a boil and immediately reduce to medium-low heat. Cover with a lid and cook for 12 minutes, stirring halfway to prevent sticking.

Once the pasta is cooked, mix in 1 cup of cheese. Top with the remaining cheese and allow it to melt before serving.
