# Steps:

01 - Peel and dice the potatoes, then place them in a large mixing bowl. Add olive oil, garlic powder, smoked paprika, salt, and pepper, and toss to combine evenly.
02 - Transfer the seasoned potatoes to the basket of an air fryer. Cook at 400°F for 20 minutes, shaking halfway through. Set aside.
03 - Add the diced chicken breasts and Italian seasoning to a small bowl, and toss to coat evenly. Set aside.
