Set your oven to 375°F (190°C) and grease a 9×13-inch pan to prevent sticking.

Stir together sour cream, cream of chicken soup, melted butter, garlic powder, paprika, salt, and pepper in a big bowl until smooth.

Place half of the sliced potatoes evenly in the pan. Add a layer of half the sliced kielbasa, followed by half the minced onion. Spread out half the sauce on top and sprinkle with 1 cup of shredded cheddar cheese.

Do the same again with the rest of the potatoes, kielbasa, onion, the sauce, and finish it off with the rest of the shredded cheese.

Cover the dish with foil and pop it in the oven for about 40 minutes.

Take off the foil and bake for another 15-20 minutes, letting the cheese melt and bubble, and making sure the potatoes are soft.

If you'd like, sprinkle chopped parsley on top, then serve it up warm.
