One Pot Cheesy Smoked Sausage (Print Format)

01 - 1 tablespoon olive oil
02 - 4 tablespoons butter
03 - 1 red bell pepper, diced
04 - 1 green bell pepper, diced
05 - 1 yellow onion, diced
06 - 1 jalapeno, diced (optional)
07 - 6 to 7 garlic cloves, minced
08 - 1 pound andouille sausage, sliced
09 - 14.5 ounces can of fire-roasted diced tomatoes
10 - 1 cup half-and-half (or milk)
11 - 3 cups chicken broth
12 - 12 ounces bow tie pasta
13 - 8 ounces sharp cheddar cheese, grated
14 - 8 ounces pepper jack cheese, grated

→ Seasonings

15 - 1 tablespoon garlic powder
16 - 1 tablespoon onion powder
17 - 1 teaspoon black pepper
18 - 1 to 2 teaspoons Cajun seasoning (such as Slap Ya Mama, optional)
19 - Salt to taste

# Steps:

01 - In a large pan or Dutch oven, melt the olive oil and butter over medium heat. Sauté the diced peppers and onion for about 5 minutes and add the seasonings.
02 - Push the sautéed vegetables to one side and add the sliced andouille sausage. Cook until browned, then add the minced garlic and sauté for another minute.
03 - Stir in the fire-roasted diced tomatoes, half-and-half, chicken broth, and pasta. Ensure the pasta is fully submerged, adding more broth if necessary.
04 - Bring to a gentle boil, cover with a lid, reduce heat to a simmer, and cook for 15–20 minutes, stirring occasionally, until the pasta is cooked.
05 - Gradually stir in the grated cheeses a little at a time, ensuring each addition melts completely before adding more. Serve hot.
