Cheesy Smoked Sausage Rice Skillet (Print Format)

# Ingredients:

01 - 14 oz package smoked sausage
02 - 1 onion, chopped
03 - 1 green bell pepper, chopped
04 - 1/2 tsp salt
05 - 1/2 tsp black pepper
06 - 1 tbsp smoked paprika
07 - 1 tbsp onion powder
08 - 1 tbsp minced garlic
09 - 2 1/4 cups chicken broth
10 - 1 cup white long grain rice, rinsed
11 - 10.8 oz package frozen broccoli florets
12 - 8 oz shredded Colby Jack cheese
13 - Dried parsley (for garnish)

# Steps:

01 - Cut the smoked sausage into small pieces. Chop the onion and green bell pepper.
02 - Heat a large skillet over medium-high heat. Add the smoked sausage, onion, and green bell pepper to the skillet. Cook until the sausage is browned and the vegetables are softened.
03 - Stir in minced garlic, then season with salt, black pepper, smoked paprika, and onion powder.
04 - Add the rinsed rice and chicken broth. Bring the mixture to a boil. Reduce the heat to medium-low, cover with a lid, and let it cook for about 20 minutes.
05 - Halfway through the rice cooking time, add the frozen broccoli florets to the skillet. Continue cooking until the rice is tender.
06 - Mix in about a cup of shredded Colby Jack cheese. Top with additional cheese and cover with a lid to let it melt. Optionally, place the skillet under the broiler for a few minutes.
07 - Top the dish with dried parsley and serve immediately.
